Summary Beginning of the journey at the "Plage des Salines": Raphaël meet Jacky (Jacques-Henry Vartel), a bike tours guide and together riding their mountain bikes they discover the mangrove, the pond, a beautiful beach and wild spaces of this area.Then in Fort-de-France Raphaël meets Tatie Maryse, a culinary blogger: they drink a spicy cocoa beverage prepared with lemon, chili and and cinnamon: Tatie Maryse organizes on an estate a cooking workshop and they visit the "Jardin de Balata", a creole house with a garden full of tropical plants.Tatie Maryse shows Raphaël the West Indian bay tree or bay rum tree (in French bois d'Inde-Pimenta racemosa) whose bays and leaves are used in the creole cooking and also a medicine.Later they meets Jimmy and Thierry Lauzéa, two chocolate makers: in their factory they prepare chocolate with different spices: chili, lemongrass, cinnamon,etc.Thierry Lauzéa pays a visit to Alain a cocoa producer, Kora Bernabe, another cocoa producer explains that in the 17 the century the cocoa of the Martinique was well known in France.
